Jain vada pav ka vada recipe

 Ingredients : 

For the vada mixture,

  • 3 Raw bananas, boiled, peeled and mashed 
  • 1 tbsp green chilies and curry leaves paste 
  • 1 tsp crushed coriander seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • a pinch of asafoetida (Hing)
  • salt to taste
  • 1/2 tsp red chili powder
  • 1/4 tsp garam masala powder
  • 1 tbsp oil 
  • 2-3 tbsp mint or coriander leaves, chopped 
  • 2 tbsp lemon juice 
  • oil for deep-frying  

For the batter,
  • 1 cup gram flour (Besan)
  • 1/2 of water
  • 1/2 tsp salt
  • 1/4 tsp soda powder/ eating soda powder (Bicarbonate)
Method :

Heat 1 tbsp oil in a pan, add cumin, mustard seeds, crushed coriander. When the seeds crackle, add asafoetida, saute on a medium flame for a few seconds. Now add green chili and curry leaves paste and stirs on a low flame for a few seconds.
Now add the mashed banana, salt, and all the powdered of spices, mix well and cook it on a medium flame for 2-3 minutes. Now add lemon juice and mint leaves, mix them. Turn off the flame and keep aside to cool completely.
Now divide the mixture into 11-12 equal portions. The shape gives each portion into a round ball.

Now Make the batter and vada, 

Combine the gram flour, salt, soda and water in a deep bowl and make a thick batter.
Heat the oil in a deep pan, dip each vada in the prepared batter and deep-fry in the hot oil, till they turn golden brown in color from all the sides. Drain on a plate. Serve it with pav and fried green chilies.
