Delicious Moringa (Drumsticks) sabzi recipe

 Ingredients :
For sabzi,
  • 5-6 drumsticks 
  • 2 tbsp oil
  • 1 medium sized onion chopped
  • 1/2 tsp cumin seeds 
  • a pinch of fenugreek seeds
  • 1/2 tsp mustard seeds
  • few curry leaves  
For the masala, 
  • 1 tbsp coriander seeds
  • 2 tbsps peanuts 
  • 1 tbsp white sesame seeds
  • 2-3 dried red chilies or powder 
  • 2 tbsp dried coconut small pieces or grated 
  • 1/2 tsp cumin seeds
  • 1/4 tsp black pepper 
  • 1/4 tsp fenugreek seeds
  • 1 green cardamon 
  • 2 cloves 
  • 1 small stick cinnamon 
  • 3-4 garlic cloves
  • 1/2 tsp turmeric powder 
  • salt to taste 
  • 1 tbsp tamarind (soaked in water)
Method :
Rinse, peel and cut the drumsticks into 3-4 pieces and keep aside. Heat a pan, roast the coriander, cumin, black pepper, chilies, fenugreek seeds, sesame seeds, cinnamon, cardamom, cloves, peanuts. When the spices turn light brown, add coconut, and garlic to it. And keep it aside to cool down. In a blender, add roasted spices, turmeric powder, and salt, grind it. Add some water and make a smooth masala paste. Transfer it to a bowl. Heat oil in a pan, add cumin, mustard seeds, and fenugreek seeds. When they crackle, add curry leaves and chopped onion, saute for 1 minute. Add chopped drumsticks, saute for 2-3 minutes on medium flame. Now add the masala paste and cook it till the mixture leaves oil on the sides of the pan. Then add tamarind with 1/2 cup of water. And cook for 5-7 minutes on low flame. Turn off the flame. Serve it with rice, chapati.
