Vegan Strawberry Ice-Cream Recipe

Ingredients :
  • 1cup Fresh Strawberries
  • 1/2 cup cashew nuts 
  • 4 tbsp sugar or according to you  
  • a pinch of salt  
  • Some chopped Strawberries for garnishing 
Method : 
Soak cashew nuts for 30 minutes in 1/2 cup of water. Now in a blender, add soaked cashew, sugar, salt, and strawberries and blend it at a high speed. Now add the water in which cashew was soaked and blend again. Make a smooth and creamy puree. Transfer to an Ice-cream maker and sprinkle some freshly chopped strawberry on the top, following instructions for your ice- cream maker. Mine churned for about 1 hour and came out creamy but soft. I recommend transferring to the freezer until it is firm, but you may not be able to wait that long.If you don't have an ice-cream maker, simply transfer the puree into a dish and freeze it until it is frozen. Remove it and mix it in a blender again. Put it back in the freezer to freeze. Doing this will yield a smooth and creamy ice-cream instead of one with ice crystals. Enjoy your vegan ice-cream with some strawberry puree or chocolate syrup.
