Instant Bottle gourd (Louki or Dudhi) kheer recipe

Ingredients :

  • 1cup bottle gourd, peel, wash and grated 
  • 1 tsp ghee
  • 3-4 tbsp sugar 
  • 2 cups milk
  • a pinch of cardamom powder 
  • some cashew nuts and dried coconut slices
  • some raisins and chopped almonds 

Method :

Heat ghee in a thick bottomed pan and fry the cashew nuts and coconut slices until golden brown. Keep aside. In the same pan, add grated bottle gourd and saute for 5 minutes on the medium flame. Now add milk to it and cook it on low medium flame with occasional stirring until the kheer becomes thick. Now add sugar and mix well. Add cardamom powder, raisins, almonds, and fried nuts. Mix well. Turn off the flame. Serve it fasting time.
