Healthy and tasty Zucchini parathe recipe

Ingredients : 

For the dough-
  • 2 cups wheat flour 
  • 2 tbsp oil 
  • 1 tsp salt 
  • kneaded for water 
For stuffing-
  • 1 zucchini, grated and squeeze out the water 
  • 1 onion, finely chopped
  • 4-5 garlic cloves, grated 
  • 1-2 green chilies, finely chopped
  • 1/2 tsp black pepper powder 
  • 1 tbsp oil
  • salt to taste 
  • few coriander leaves, finely chopped
  • oil or ghee for shallow fry

Method :

Make a soft dough with flour adding salt and oil. Mix well. Add little water at a time and knead the dough. Dough will be soft and we do not need to rest this dough. In a plate or bowl, add grated zucchini, onion, garlic, salt, black pepper and green chilli. Now heat 1 tbsp oil in a pan, add zucchini mixture and saute for 2-3 minutes until the zucchini is dry. Remove from the gas. Mix coriander leaves and keep aside to cool.

Take a ball of the dough, roll into a circle, roll out two individual circle (roti) for two layers of the paratha. Place one circle or roti in bottom, spread zucchini mixture evenly on roti. Now cover the top with the layer of roti and press all over sides. Heat a tawa, roast from both sides. Apply oil or ghee if needed. Remove from the heat. Serve it hot with any sauce, chutney or raita.
