Eggless Caramelised Apple Cake Recipe





Ingredients :

For the cake batter-
  • 1 cup all-purpose flour 
  • 1/2 cup sugar powder
  • 1 tsp baking powder 
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon powder 
  • 1 tbsp vanilla extract 
  • 2 tbsp butter or 4 tbsp oil 
  • 1/2 milk 
For the caramel apple-
  • 1 cup sugar 
  • 4 tbsp water
  • 1 tbsp butter 
  • 1 Apple, cut into thin slices 

Method :

Make the caramel, 

In a sauce pan, add sugar and 1/4 cup of water. Do not turn the flame on yet. Using rubber spatula, mix the sugar and water until combined and then turn the heat on to medium flame. After cooking the sugar on medium high for about 12-13 minutes, you will notice it turn to a caramel color, add butter and stir continuously until it has melted. Add Apple slices and cook for half minute, then remove from heat. Be careful, the liquid caramel will be very hot at this point.

Make the cake,

Preheat the oven to 350 degrees F(180 degrees C). Make the batter by mixing in a bowl flour, baking powder, baking soda and cinnamon powder. Add the butter or oil. Mix them. Add in milk, sugar powder and vanilla. Whisk them together. Now cake batter is ready.

Now in a greased cake pan, first pour the caramelized apple in the cake tin and then pour the cake batter on the top. Bake on the middle oven rack for 35-40 minutes. The cake is done when it's golden brown around the edges and just beginning to pull away from the edge of the pan. A toothpick inserted in the center will come out clean. Now remove the cake from the oven and allow it to cool in the pan on a rack  for about for 10 minutes. Bring 1 inch of water to a simmer in a skillet wide enough to hold the cake pan. Carefully run a sharp knife around the inside of the pan several times, then rest the pan in the water to soften the caramel, about 10 minutes. Remove the pan from the water and dry.
Invert a plate on top of the cake, then flip over the cake and plate. Cut slices and serve it.
