Kasi halwa (White pumpkin halwa) recipe



Ingredients :
  • 1 big cup grated Ash gourd or white pumpkin 
  • 1/2 cup sugar 
  • 1 tbsp ghee
  • 1/4 tsp cardamom powder 
  • 8-10 cashew nuts
  • 3-4 pistachio, chopped 
  • a pinch of saffron

Method : 

Wash the ash gourd well and remove the center portion with seeds. Now remove the skin and grate the flash.
Heat ghee in a heavy bottom pan. Add grated white pumpkin. Stir-fry till the pumpkin softens and the water evaporates. Add sugar, mix well and let it cook again over medium flame. Add saffron and mix them. Cook again for 5-7 minutes on lower flame. Add cashew, pistachio and cardamom powder. Mix well. Turn off the flame. Serve it hot or cold.
