Layered khasta nimki recipe





Ingredients : 
  • 1 cup all-purpose flour (maida)
  • 2 tbsp ghee (for moin) 
  • 1 tsp salt 
  • 1 tsp carom seeds
  • 1 tsp Nigella seeds (kalonji)
  • 1 tbsp ghee+2 tbsp maida mix (make a paste)
  • oil or ghee for the frying 
Method :

In a bowl add 1 tbsp ghee and 2 tbsp flour. Mix well and keep it aside. Sieve the flour in a big bowl. Add 2 tbsp ghee, salt, carom seeds and Nigella seeds. Mix well. Now add water and knead the well to make a tight dough. Divide into five portions. Roll the dough with the rolling pin in a thin circle shape (like a chapati). Apply, 1/2 tbsp maida and ghee mixture over the rolled dough circle. Add another rolled dough and again apply some ghee-flour mixture paste over the rolled dough circle. Assemble all rolled circles using ghee mixture similarly. Now roll it into a long shape by hand. Cut it into small pieces. Using the rolling pin slightly press the small pieces to flatten it and cut it in between into half.  Do it with all the pieces and keep aside. Heat oil or ghee in a pan and deep fry the layered khasta nimkis on the medium low flame till it turns light golden in colour. Once it cools down, it is ready to be stored in an air-tight can.
