Kathi Goja ( A Bengali sweet) recipe

Ingredients : 

For the dough-
  • 1 cup all purpose flour (maida)
  • 1 tbsp ghee or 2 tbsp oil 
  • oil for deep frying 
For the sugar syrup-
  • 1 cup sugar
  • 1/2 water 
  • a pinch of saffron (optional)
  • 1 tbsp roasted sesame seeds for garnishing
Method : 
In a big bowl or plate mix all purpose flour and ghee or oil. Rub it with the flour until it turns into a crumbly texture. Add water- little by little- and make a smooth dough. Divide the dough into 5 portions. Then roll it out into a thin circle. Apply 1/4 tsp ghee over the rolled circle. Add next dough circle and apply ghee. Add all dough circles, layer by layer, and cut into half a long shape with a knife and keep aside. Heat enough oil for frying the Gojas. 
Fry in batches on slow flame till it turns a light golden brown color. Remove on a kitchen paper or steel plate. 

Making the sugar syrup-

Take a cup sugar, add in 1/2 cup water and cook the syrup till one string consistency. Add saffron water and mix well. In this, dip the fried Gojas and swirl them into the syrup and remove. Spread roasted sesame seeds over the gojas. The Gojas will be crunchy and sweet. Once Gojas cool down, it is ready to be served or stored.
