Tasty Yam (elephant foot) ki sabzi recipe

Yam ki tasty sabzi 

Ingredients :

  • 1/2 kg. Yam (suran or jamikand)
  • 4-5 garlic cloves 
  • 1 tsp yellow mustard seeds
  • 1 tbsp Kashmiri red chilli powder 
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 2-3 tbsp tamarind pulp 
  • 1/4 cup curd
  • salt to taste 
  • 1/4 tsp fenugreek seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 12-15 curry leaves
  • 4-5 tbsp oil for cooking 
  • 2 tbsp grated coconut for garnishing 

Method : 
Remove the skin of the yam with a knife and cut into any shaps (cubes or slices) and wash. In a pressure cooker add yam and a glass of water, boil it until a whistle. Drain the water of boiled yam and keep aside for cool.

Now make masala paste, in a grinder add garlic, mustard seeds, salt and all the spices powder. make a fine paste.
Heat oil in a pan, fry the boiled yam till golden brown colour. Remove it and keep aside. The Same pan, add fenugreek seeds, cumin and mustard seeds. Add curry leaves and crackle them. Add masala paste and saute for 2-3 minutes on medium flame. Add tamarind pulp and 1/2 cup water. Add fried yam and cook for 5 minutes. Now add curd and mix them, cook for 1-2 minutes. Turn off the flame. Garnish with coconut or coriander leaves. Serve it with rice and chapati.
