Achari bharwa bhindi (stuffed Ladyfinger with pickle spices) recipe (No onion-garlic)




Ingredients :
  • 1/2 kg. Bhindi (Ladyfinger)
  • 1 tsp cumin seeds
  • 1 tbsp coriander seeds
  • 1 tbsp fennel seeds
  • 1 tsp nigella seeds (kalonji)
  • 1/4 tsp fenugreek seeds
  • 1/2 tsp mustard seeds
  • a pinch of asafoetida (Hing)
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • salt to taste 
  • 1 tbsp mustard oil 
  • 1 tbsp dry mango powder(Amchur powder)
  • 2 tbsp tamarind pulp 
  • 1-2 tbsp mustard oil for cooking 
Method :

Roast all seeds for 1 minute on low flame and grind them. Transfer to a bowl or plate. Add red chilli powder, asafoetida, turmeric powder, 1 tbsp mustard oil, salt, amchur powder and tamarind pulp. Mix it well and keep aside for 10 minutes.

Wash bhindi and dry it with a towel. Remove the stem and cut along the length of the ladyfinger. Do not cut it completely. Now stuff roasted masala mixture into all ladyfinger. Heat 1 tbsp oil in a pan, place the stuffed bhindi on the pan. Cook them on medium flame and keep flipping in between, till they become dark green in colour. When bhindi turns soft, switch off the flame. Serve it with puri, paratha, chapati and rice.
