Achari Aloo (spicy pickled baby potato) stir-fry recipe

I think everyone likes baby potatoes as they look very attractive. Baby potatoes are harvested for their intense flavor. I combined the flavorsome baby potatoes with an achari twist. My family loves to have this achari potatoes with puri and paratha. Also, this dish is very tiffin friendly!

Ingredients :
  • 10-12 baby potatoes or medium sized potatoes
  • 2 tbsp onion paste 
  • 2-3 tbsp pickle's oil (Achar ka tail) 
  • 1 tsp coriander powder 
  • 1/4 tsp turmeric powder 
  • 1/2 tsp red chilli powder
  • salt to taste 
  • 1/2 tsp cumin seeds
  • 1 tsp fennel seeds 
  • 1/2 tsp onion seeds(kalonji)
  • 1/4 tsp carom seeds 
  • 1 tsp coriander seeds, crushed 
  • 1/2 tsp mustard seeds
  • 1/4 tsp fenugreek seeds 

Method :

Wash and boil the potatoes in salted water. Peel the baby potatoes and prick with a fork or a toothpick. In a large mixing bowl, add potatoes, onion paste, salt, all powdered of spices and pickle's oil (Achar ka tail). Mix gently and marinate for 15-20 minutes.

Now heat a pan, add all seeds and roast them for 1 minute on low flame. Now add marinated potatoes and saute for only 4-5 minutes on medium flame. Turn off the flame. Serve it with puri, paratha, or chapati.
