Poha ya chivda (pressed rice or flattened rice) ki stuffed kachori recipe






Ingredients : 

For the outer cover,

  • 2 cup pressed rice (poha)
  • 2 tbsp all-purpose flour (maida)
  • 1 tbsp oil
  • 1 tsp red chilli powder
  • 1/2 tsp salt or salt to taste 
  • oil for frying 
For the Filling, 
  • 1 cup Aloo bhujia namkin sev 
  • 4 tbsp tamarind mint sweet chutney (imli pudina ki chutney)
  • 1/2 tsp red chilli powder or green chilli, finely chopped 
  • 1 medium sized onion, finely chopped 

Method :

Wash and soak the poha in little water for 10-12 minutes. In a big bowl, add soaked poha, maida, oil, salt and red chilli powder. Mix them well with your hand. Add 1/4 cup of water and knead it to a smooth dough. And keep it aside.

Making filling, 

Take the Aloo bhujia in a mixer and crush them. Transfer to a plate or bowl, add chilli powder or green chilli, salt, onion and sweet chutney. Mix them well. And our stuffing is ready.

Making kachori, 

Grease your palm and finger with oil and take small or medium sized ball out of the outer dough and roll it and press it in the middle and then make like a bowl. Add 1-2 tbsp stuffing and gently close the dough. Just wet your hands with water and seal the kachori nicely so that the filling doesn't come out in the oil. Heat oil in a frying pan, drop 3-4 kachoris in the pan and deep fry them on medium flame on both sides, till they are golden brown colour and becomes crispy outside. Take the kachoris out from pan to a plate. Serve it hot with any sauce or chutney.
