Lahsuniya Arvi patta ya patra (Garlic with Colocasia leaves stir fry) recipe

Ingredients :

For the colocasia rolls,
  • 5-7 Colocasia leaves (Arvi patta ya patra)
  • 1/2 cup gram flour 
  • 1/2 cup wheat flour
  • 1/2 tsp turmeric powder 
  • 1/4 tsp red chilli powder 
  • 1/2 tsp salt
  • Water as required 
For the spices,
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds 
  • few curry leaves
  • 1 tbsp garlic-ginger paste 
  • 1/2 tsp red chilli powder 
  • 1 tbsp coriander powder 
  • 1/4 tsp turmeric powder 
  • 1 pinch of salt or (salt to taste) 
  • 2-3 tbsp lime or lemon juice 
Method :

For making the batter,

In a big bowl, add wheat flour, gram flour, salt, chilli powder, turmeric powder and required water to make a thick batter and keep aside.

For making the colocasia leaves roll, 

Wash colocasia leaves and dry them. Remove the stem and thick veins from each leaf using a sharp knife. Place the leaves on a flat surface such that its veins facing (back side) up. Now apply the batter on the leaf using your fingers and make evenly. Place another leaf on the top and apply the batter again on the fold side. Fold the leaf two sides and apply the batter again on the folded side. Roll the leaf tightly while applying the batter with each fold. Cut the roll into a medium thick slices. Grease the steamer pan or plate with few drops oil. Place the roll slices and steam for 15-20 minutes or steam in a pressure cooker only 4-5 whistles. Remove from the steamer or cooker and let it cool.

Heat oil in a pan, add mustard seeds, cumin seeds and curry leaves, crackle them. Add garlic-ginger paste, coriander powder, red chilli powder, turmeric powder and salt. Mix them and saute for 1-2 minutes on low-medium flame. Now add steamed colocasia leaves. Mix well and saute for 1 minute on medium flame. Turn off the flame. Add lime juice and mix well. Serve it with paratha, chapati, dal-chawal.
