Crispy khaja recipe






Khaja is a traditional sweet from UP and Bihar. It tastes sweet and is very flakey and crispy. This is my favourite sweet. I hope you guys likes it too.

Ingredients :
  • 1 cup All purpose flour (Maida)
  • 3 tbsp ghee + 2 tbsp all purpose flour for the paste
  • Oil or ghee for deep frying 
  • 2 cup sugar 
  • 1/2 cup water 
Method :

In a bowl, add 3 tbsp ghee and 2 tbsp flour. Mix well and keep aside.

Sieve the flour in a big plate or bowl. Add ghee and mix well. Add water and knead the well to make a tight dough. Divide into 4 portions. Roll the dough with the rolling pin in a thin circle shape (like a very thin chapati).

Apply, 1 tbsp ghee with flour mixture over the rolled dough circles. Roll into a log shape. Now cut it into small pieces. Using the rolling pin slightly press the small pieces to flatten it. Do it with all the pieces and keep aside.

Heat oil in a pan and deep fry the khaja pieces on low flame till it turns light golden in colour.

Take sugar and water in another pan, make a three string consistency sugar syrup. Turn off the flame. Drop the khaja into sugar syrup for few seconds and remove. Once khaja cools down, it is ready to be served or stored.
