Baigan (Brinjal) bhajiya or pakora recipe

Ingredients : 
  • 4 medium sized brinjal, cut into thin slices
  • 1 cup gram flour 
  • 1/2 cup rice flour 
  • 1 tbsp garlic-ginger paste 
  • 1/2 tsp cumin seeds
  • 1/2 tsp fennel seeds 
  • 1/2 tsp turmeric powder 
  • 1/2 tsp red chilli powder 
  • salt to taste  
  • oil for deep frying 
Method :

Cut the brinjal into thin slices. Wash and drain well. In a big bowl, add gram flour, rice flour, all spices powder, salt, garlic-ginger paste, cumin seeds and fennel seeds. Now add water as required. Whisk into a smooth batter without lumps and make a thick batter. Heat oil in a pan, dip the brinjal slices in the batter. Deep fry on medium flame till golden brown in colour. Drain on an absorbent paper. Serve it hot with tomato sauce or any chutney of your liking.
