Muttar (green peas) ki kachori recipe

Ingredients :

For the dough-
  • 1 cup wheat flour 
  • 2 tbsp all-purpose flour 
  • 1/2 tsp salt 
  • 4 tbsp oil 
  • Water as needed 
  • Oil for frying 
For the filling-
  • 1 cup green peas, boiled 
  • 1 medium onion, finely chopped 
  • 1/4 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/4 tsp onion seeds
  • 1/4 tsp fennel seeds 
  • a pinch of asafoetida (hing) 
  • 2 green chillies 
  • 4 garlic cloves
  • 1 small piece ginger 
  • salt to taste 
  • 1/4 tsp garam masala 
  • 1/4 tsp red chilli powder
  • 1/2 tsp coriander powder
  • 1 tsp dried mango (Amchur) powder 
  • 2 tbsp lemon juice 
  • 2-3 tbsp raisins (kismish)
  • few coriander leaves, chopped 
  • 1 tbsp oil 
Method :

To Make Dough-

In a big bowl, add flours, salt and oil and mix it well. Kneaded into a soft dough using enough water. And divide the dough into 7-8 portions.

To Make Filling-

In a blender, add the boiled green peas, ginger, garlic and green chillies, and grind it without water. Grind till it forms a smooth paste. Heat oil in a pan, add all seeds and hing, crackle them. Add onion, saute for few seconds. Add red chilli powder, coriander powder, garam masala powder and salt. Mix well. Add green peas paste and stir-fry for another few minutes. Turn off the flame. Mix lemon juice, dried mango (amchur) powder, coriander leaves and raisins.

To Make Kachori- 

Take a part of the dough and with your fingers flatten the edges and make a circle. Leaving center little thicker than the edges around. Mould the dough into a cup and place 1 tbsp of filling in the center. Bring together all the sides seal it tightly and press the center of the kachori with your palm. Prepare all kachoris using the same method.

Heat oil in a deep fry pan and fry them in hot oil, on a medium flame for sometime. Then, reduce the flame and deep-fry on a slow flame, till golden brown in colour. Drain on a plate or absorbent paper. Serve it hot with any sauce and chutney.
