Mixed Vegetable Lollipops Recipe




Ingredients :

For lollipops,
  • 2 big sized potatoes, boiled, peeled and mashed 
  • 2 tbsp carrot, grated 
  • 2 tbsp cauliflower, grated 
  • 2 tbsp sweet corn seeds 
  • 1 medium sized onion, finely chopped 
  • 2 green chillies, finely chopped
  • 1 tsp garlic, grated 
  • 1 tsp ginger grated 
  • 2 tbsp coriander leaves, chopped 
  • 1 tbsp all-purpose flour (maida)
  • salt to taste 
  • 1 tsp chaat masala
  • 1/4 tsp black pepper powder 
  • 1 tbsp pizza mix herb masala or 1/2 tsp garam masala
For the batter,
  • 4 tbsp all-purpose flour 
  • 1 cup of water
  • 1/4 tsp salt
  • 1/2 tsp Kashmiri red chilli powder or a pinch red food colour for the colour 
  • 1 cup of bread crumbs 
  • few Ice-cream sticks or any clean sticks (I used curry leaves sticks because it is usually available in people's houses)   
  • Oil for frying 
Method :

In a big bowl or plate, add all ingredients of lollipops. Mix well. Divide the mixture into equal portions. Keep aside.

Make a batter, in another bowl by adding flour, salt, Kashmiri red chilli powder or red food colour and water. Mix well. The batter should not be too thick or thin. It should be of the right consistency to coat the lollipops.

Now make big lemon sized balls of the lollipop mixture and give a shape of lollipops and place these on a plate.

Heat oil in a deep frying pan, dip the lollipops into the batter and immediately coat these lollipops with bread crumbs. Dip the lollipop into the oil. Fry the lollipops from both sides on medium flame till golden brown in colour. Remove these lollipops onto a plate or tissue paper. Now fix the fried lollipops onto sticks. Serve it hot with any sauce or chutney.
