Adraki aloo (Ginger potato) sabzi recipe




Ingredients :

  • 4 medium sized potatoes, boiled, peeled and cut into cubes 
  • 1 tbsp ginger grated or minced ginger 
  • 1 onion, chopped
  • 2 green chillies 
  • 2 tomatoes, chopped
  • 1/2 tsp cumin seeds(jeera)
  • 1/2 tsp carom seeds(ajwain)
  • a pinch of asafoetida (Hing)
  • 1 bay leaf 
  • 1/2 tsp cumin powder 
  • 1/2 tsp fennel seeds (sonf) powder 
  •  1/2 tsp turmeric powder 
  • 1 tbsp coriander powder 
  • 1 tsp red chilli powder 
  • 1/4 tsp garam masala
  • salt to taste 
  • 2 tbsp oil 
  • few grated ginger for garnishing 

Method :
Heat oil in a pan, add cumin seeds, carom seeds, bay leaf and hing. After few seconds, add onion, ginger and green chilli, saute for 1 minute. Add tomato, salt and all spices powder, cook for 2-3 minutes on medium-low flame. When tomato are soft and the mixture turns to red colour and oil leaves at end of the pan.  Add potato and mix them. Add 1 cup of water and let it cook for 5-7 minutes on medium flame. Turn off the flame. Garnish with grated ginger. Serve it with puri, paratha, roti.
