Vegetables Stuffed Ravioli Pasta Recipe





Ingredients 

For the dough:
  • 1 cup all-purpose flour
  • 1 tbsp semolina 
  • 1/2 tsp salt 
  • 1 tbsp butter
  • Water, ice-cold 
For the filling:
  • 1/2 cup carrot, finely chopped 
  • 1/2 cup cauliflower, grated
  • 1/2 cup french beans, finely chopped 
  • 1/2 cup green peas
  • 1/2 cup capsicum, finely chopped 
  • 1/2 cup sweet corn
  • 1 small onion, finely chopped
  • 5-6 cloves garlic, finely chopped
  • 2 green chilies, finely chopped 
  • salt to taste
  • 1 tsp mix herbs (pasta mix herb masala)
  • 1 tsp chilli flakes 
  • 1 tbsp oil

For the dough:

Sieve the flour, add semolina, salt and butter, mix well. Now add ice-cold water and make a soft dough and keep aside to rest for 1 hour.

For the filling: 

Heat oil in a pan, garlic, onion and green chilli, saute for few seconds. Add all chopped vegetables and salt, saute for 2-3 minutes. Add chilli flakes and mix herb masala, mix well. Remove and keep aside.

Divide the dough into 8-9 equal portions. Roll out thin rounds (circles) of equal size. Put one round on rolling board, put a small amount of filling. Apply a little water around the outer edges of the circle. Put another circle on the top. Press with the fingers around the filling to ensure that there are no air pockets, cut a round shape or any other shape of your choice with a cutter. Seal it with the fork around the corner. Repeat this step for the rest of the dough.

Boil plenty of water in a deep bottomed vessel or pan, add 1/4 tsp salt and 1 tsp oil. Put 5-6 pieces ravioli at a time in the boiling water. Cook ravioli of about 6-7 minutes till they are completely cooked, when they come on top. Take ravioli out and put in the prepared sauce and cover it generously with the sauce. Add grated cheese on top and sprinkle some mix herbs and chilli flakes. Serve it hot.
