Moong dal (split green gram)-chawal ki khichdi recipe




Ingredients 

For khichdi:
  • 1 cup rice 
  • 1/2 cup split green gram (yellow moong dal)
  • 1 tbsp ghee for moong dal frying 
  • 1/2 tsp turmeric powder 
  • salt to taste 
  • 2 cup mix vegetables (cauliflower, french beans, carrot and 1-2 green chilli), chopped
  • 2 tomatoes, chopped 
  • 1 tbsp crushed ginger 
  • few coriander leaves for garnishing 
  • 4-5 cups 
For tempering: 
  • 1 tbsp ghee 
  • 1 dried red chilli
  • 1 bay leaf 
  • 1 tsp cumin seeds
  • a pinch of asafoetida (Hing)
Method 

For khichdi:

Wash rice and keep aside. Heat 1 tbsp ghee in a pan, add moong dal. Fry it till light golden brown on low flame and then remove it. In a pressure cooker, add rice, fried moong dal, salt, turmeric powder, chopped vegetables, green chilli and chopped tomatoes. Cover with a lid and cook it till 2 whistles. Turn off the flame. Allow the steam to escape before opening the lid and then add crushed ginger and mix well.

For Tempering: 

Heat ghee, add cumin seeds, hing, bay leaf and red chilli. When the seeds crackle and acquire a brown colour add the tempering to the cooked khichdi and just cover with the lid.  After 5-7 minutes open the lid and serve it hot with pickle.
