Gobi 65 recipe

Ingredients : 
  • 1/2 kg. cauliflower (gobi)
  • 1/2 cup all-purpose flour (Maida)
  • 1/2 cup rice flour 
  • a pinch of turmeric 
  • 1/4 cup curd 
  • 1/4 tsp baking powder 
  • 2 tbsp coriander leaves, chopped
  • 1 tbsp garlic- ginger paste 
  • 1 tbsp Kashmiri red chilli powder 
  • Salt to taste 
  • Water as needed 
  • Oil for frying 
For the gobi 65 masala (optional)
  • 1 tbsp oil
  • 1 tbsp grated ginger
  • 1 tbsp curd
  • 1/2 tsp mustard seeds
  • a pinch of asafoetida (hing)
  • few curry leaves 
  • 2 green chillies, chopped 
  • 2 tbsp lemon juice 
  • 1/2 tbsp chaat masala
Method :

Cut cauliflower into small pieces size and wash with water. Boil the cauliflower in water with 1/2 tsp salt in a pan for 5 minutes. Turn off the flame. Drain water completely. In a big bowl, add all ingredients one by one except oil. Mix well. Heat oil in a pan, dip and deep fry the cauliflower pieces in hot oil on medium flame until golden brown in colour and crispy. Remove the cauliflower from the oil onto a tissue paper to absorb excess oil.

Gobi 65 Masala:

Heat 1 tbsp oil in a pan, add mustard seeds, hing, ginger, green chilli, curry leaves. After the mustard crackles, add curd and garam masala. Stir and let the mixture cook till it thickens. Add fried cauliflower and saute for 1 minute. Sprinkle chaat masala and lemon juice. Serve it as a starter or snacks time.
