Healthy & Vegan Christmas Trifle Recipe

With Christmas around the corner, it seems only logical to share with you dear readers a few healthy dessert recipes which you can enjoy guilt-free. On the roster today is this trifle recipe. This trifle is totally vegan and gluten-free while being partly-organic (100% organic if you can source organic fruits and coconut) and totally healthy. Plus you don't require tedious equipment like an oven. Need some more convincing? Well, you can involve your children too in making this dessert and I bet they are going to love doing it. Ingredients

  • 1 cup Coconut milk (To make vegan custard)
  • 10 gms Agar-agar or China grass (To make vegan custard)
  • 1 tsp Cardamom powder (I used organic Cardamom Powder by Conscious Food)
  • 1 cup Coconut cream (To make whipped cream)
  • 1 cup Almond cookies (I used Conscious Food's, they are vegan and gluten free)
  • 1/2 cup Nuts of your choice (I used Conscious Food's Cashew Nuggets)
  • 1/4 cup Brown Sugar (I used Golden Sugar by Conscious Food)
  • 2 cups Assorted fruits (I used Pomegranate, Apple, Orange, and Pineapple)

Method

To make Vegan Custard

In a bowl take coconut milk and add brown sugar to it according to your taste. Add in cardamom powder. Whisk everything well. Now bloom 10 gms of china grass or agar-agar in boiling water and add it to the coconut milk mixture. Combine properly. Let it rest for 10-15 minutes. After that, you will notice that the mixture has about to thicken, once again whisk it well. In the end, you will have a silky smooth custard-like consistency. Your vegan custard is ready.






To make Whipped Cream

Take coconut cream, cardamom powder and brown sugar in a bowl and whisk it until stiff peaks form, i.e., it looks like whipped cream.



To assemble the Trifle

Crumble the almond cookies and put it in the serving glass or dish. Add the vegan custard on the almond cookie layer. Now, start layering your fruits and alternate it with whipped cream. After that, put a layer of coated nuts for crunch. Top it with some more whipped cream and the remainder of fresh fruits. Your trifle is ready! You can eat it immediately or let it chill in the refrigerator for an even better taste.
