Curd Rice recipe

Ingredients :
  • 1/2 cup Raw rice 
  • 2 cup of water 
  • salt to taste 
  • 1 cup curd 
For tempering, 
  • 1 tbsp oil 
  • 1/2 tsp mustard seeds
  • few curry leaves 
  • a pinch of asafoetida (Hing)
  • 1 green chilli, finely chopped 
  • 1 tbsp peanut 
  • 2-3 tbsp pomegranate, coriander leaves for garnishing  
Method :
Clean and wash the rice.  Put it in a pressure cooker, add rice, water and salt, cook it till done. Switch off the flame and keep aside to cool. After 10-15 minutes open the cooker lid and add the curd. Heat oil in a pan or big spoon, add mustard seeds, asafoetida, peanuts, curry leaves and chilli and till light brown color. Add the cooked rice to the curd mixture and mix them well. Garnishing with pomegranate, coriander leaves and few finely chopped green chilli.
