Cheese Stuffed Hung Curd Kebab recipe

Generally new cooks find the world of Indian cooking daunting. After all, Indian cuisine is full of spices and flavouring and getting them right takes a long time! So when SPRIG contacted me to incorporate their range of ready-made spice mixes in my cooking, I knew my readers would be very happy. These spice mixes offered by SPRIG takes away the guessing part from adding spices to your food- Use a few teaspoons and you are good to go! Don't believe me? Ingredients :
  • 1 cup hung curd 
  • 2 tbsp gram flour (besan)
  • 2 green chilies
  • 2-3 tbsp SPRIG Malacca spice mix
  • 1/4 tsp red chilli powder (optional)
  • Rock salt to taste 
  • 2 tbsp fresh mint or coriander leaves, finely chopped
  • 2 tbsp all-purpose flour for kebab rolling 
  • 1 tbsp desi ghee or oil for shallow frying
  • 4-5 tbsp grated cheese 
Method :

To make hung curd:
Lay a muslin cloth over a bowl and pour the curd into it. Pick up the edges of the cloth and tie a knot. Hang it and allow all the whey to drain off for 6-7 hours. It will turn into a very creamy and smooth Hung curd.

To make hung curd kebab:
In a bowl take that hung curd, add gram flour, rock salt, mint or coriander leaves, green chilli, red chilli powder and Spring Malacca spice mix to it. Mix everything together nicely. For the filling- add Sprig Malacca spice mix into grated cheese and mix well to coat the grated cheese with the spices. Now make the kebab by making small balls out of the hung curd mixture. Pat each ball flat and fill in the stuffing of cheese in the center. Bring together the edges and seal it lightly. Pat it lightly into a flat kebabs in all-purpose flour. Heat a non-stick pan or tawa and keep it on medium flame. Put 1-2 tbsp oil or ghee and shallow fry each kebab for about 1-2 minutes, flipping sides. Serve it with a refreshing salad and any chutney of your choice..
