Bread toast with more vegetables recipe





Ingredients :
  • 8 pieces bread 
  • 4 medium potatoes, boiled, peeled and grated 
  • 1/2 cup mix vegetables (capsicum, green peas, carrot, corn, cauliflower), finely chopped 
  • 2 green chillies, finely chopped 
  • 1 small onion, finely chopped 
  • 4 garlic, finely chopped or grated 
  • 2 tbsp coriander leaves, chopped 
  • salt to taste 
  • 1 tsp pizza mix masala 
  • oil for shallow fry 
For the batter, 
  • 1 cup carrot puree
  • 1/2 cup water
  • 1/2 cup rice flour 
  • salt to taste 
  • 1/2 tsp black pepper powder 
  • 1 tbsp chilli flakes 

Method :
In a plate or big bowl mix all vegetables, potato, onion, garlic, green chilli, coriander leaves, salt and chilli flakes and divide the mixture into 8 portions. In a bowl, add carrot's puree, salt, water, rice flour, pepper powder and chilli flakes. Mix well and make a medium thick batter. Take a bread slice apply the mix vegetables on all bread slices and keep aside.
Heat a pan or tawa, dip a bread in carrot's batter and put it on pan or tawa. Put 2 tbsps oil and shallow fry on both sides. Fry all bread slices in the same way. Remove on a plate and cut it in two parts. Serve it hot with sauce or chutney.
