Cauliflower, carrot and spring onion (Gobi, gajar aur hare pyaz) stir-fry recipe





Ingredients :

  • 1 cup cauliflower, chopped 
  • 1 cup carrot, peel and cut into lengthwise
  • 4 pieces spring onion, finely chopped  
  • 2 green chillies
  • few curry leaves
  • 2 tbsps oil
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • a pinch of asafoetida (Hing)
  • 1 tbsp coriander powder 
  • 1/2 tsp turmeric powder 
  • 1/2 tsp red chilli powder 
  • 1/4 tsp fennel seeds powder 
  • 1/4 tsp garam masala 
  • salt to taste 

Method :
Heat oil in a pan, add all seeds and crackle them. Add curry leaves, green chilli and spring onion, saute for 1 minute. Add cauliflower and carrot and saute for 5 minutes on medium flame. Add all spices powder and salt, cover with a lid. After 2 minutes, open lid and stir them. Cook it on low flame till vegetables cooked. Turn off the gas. Serve it with paratha, chapati etc.
