Amla (Indian gooseberry) fried rice recipe

Ingredients :

  • 1 bowl cooked rice 
  • 2-3 tbsp Amla paste 
  • 1 tbsp peanut 
  • 1-2 green chillies 
  • 1 tbsp split black gram (urad dal)
  • 1 tbsp roasted sesame seeds 
  • salt to taste 
  • 2 tbsps oil
  • 1/2 tsp mustard seeds 
  • 1/4 tsp cumin seeds 
  • 8-10 curry leaves
  • a pinch of asafoetida (Hing)
  • 1/4 tsp turmeric powder 
  • 1/4 tsp garam masala powder
  • 1/4 tsp red chilli powder
  • coriander leaves, for garnishing 

Method :
Take oil in a pan and once hot, fry the peanuts until light golden brown in colour and keep aside. In the same pan, add mustard seeds, cumin seeds, asafoetida, urad dal and crackle them. Add green chilli and curry leaves. Just add Amla paste, salt and all spices powder, mix well. Now add rice and saute for 5 minutes on medium flame. Add fried peanuts and roasted sesame seeds and mix well. Turn off the flame. Garnish with coriander leaves and serve it hot.
