Vegetarian parda pulao recipe




Ingredients :
For rice-
  • 1 cups basmati rice 
  • 2-3 cups water 
  • 1/2 tsp salt 
For vegetables-
  • 1/2 cup carrot, finely chopped 
  • 1/2 capsicum, finely chopped 
  • 1 tomato, finely chopped
  • 1/2 cup green peas 
  • 1/2 cup corn 
  • 2 green chillies, finely chopped 
  • 1 medium onion, finely chopped
  • 10-12 cashew nuts 
  • salt to taste 
  • 1/2 tsp garam masala
  • 1/4 tsp black pepper powder 
  • 2 tbsp oil
For covering dough,
  • 1/2 cup all-purpose flour 
  • 1/4 tsp salt
  • water as required 

Method :

Wash rice and keep aside, soak it for 30 minutes. Boil water in a big vessel. When water has come to a boil, add soaked rice and salt. Cook on medium flame till the rice is half cook and then drain the water and keep aside.

Now to make the dough- in a bowl, add flour, salt and add slowly water and make a soft dough.

Heat oil in a pan, add onion, cashew nuts and green chilli saute for 1 minute. Add all chopped vegetables and salt and saute for 2-3 minutes. Add rice, garam masala and pepper powder and mix well. Turn off the flame. Transfer into a baking pan. Roll out the dough into a sheet large enough to cover the pan, sealing the sides. Brush some oil on the dough. Pre-heat the oven at 220 Degree. Place the pan in the oven and cook till the dough acquires a light brown colour on top and it is cooked thoroughly. It will take about 30 minutes. Remove and cut away one-half of the dough from the centre to release the fragrance. Serve it with raita or nice salad.
