Malpua in sugar syrup recipe

Ingredients :

For pua-
  • 1 cup all-purpose flour 
  • 1/4 tsp pinch of bicarbonate (soda powder)
  • ghee or oil for frying
  • 1/4 tsp green cardamom powder 
  • 2 tbsp pistachio, chopped for garnishing 
For sugar syrup-
  • 2 cups sugar 
  • 2 cup water
  • a pinch of saffron 
Method :
Sieve the flour. In a big bowl, add flour and 1/2 cup water and mix them. And keep aside for overnight. After 24 hours, add in soda powder and more water if required and mix well. Check whether your malpua batter is not too thin or not too thick and keep aside.

Now make the sugar syrup, in a pan, add water, sugar and saffron, boil it for 25-30 minutes on medium flame. Now check whether your sugar syrup is of one string consistency and then strain the syrup. Turn off the flame.

Heat oil or ghee in a heavy bottom pan, turn the flame on low after the oil is hot. Drop  1 tbsp pua batter. After 2 minutes flip pua and after 5 minutes again flip. Remove from the pan and drain. Now put it in sugar syrup for few seconds and remove it and keep aside in a plate. Garnish with cardamom powder and pistachio. Serve with cold basundi.
