Kaju katli (Cashew nuts sweet) easy, step by step recipe


Kaju katli 

Ingredients :
  • 1 cup kaju (cashew nuts)
  • 1/2 cup sugar 
  • 2 pinch of green cardamom powder 
  • 1/4 cup water
  • 1/4 tsp ghee for greasing or 2 pieces butter paper site
Method :

Make cashew nuts powder-
Roast the cashew nuts for 2 minutes on slow flame. After it cools down grind them into a fine cashew powder (Do not grind cashew too much otherwise it will start ooze oil and make powder sticky).

Make sugar syrup-
In a vessel or pan, add water and sugar and cook it over medium flame. Stir continuously and cook until sugar dissolves completely. Check whether your syrup turns thick and little sticky. Don't wait until the syrup reaches the one-string consistency, because it may end up cooked more than one-string consistency.

Make kaju katli-
Reduce flame to low and in a pan add cashew powder and cardamom powder and mix fast. Cook for 5 minutes and mix continuously until mixture thickens, don't over cook the mixture. Turn off the flame and let it cool for 4-5 minutes.

Now grease the back side of a steel thali or put a butter paper. Cool the kaju mixture until it makes a smooth dough. Put kaju mixture on the greased thali or butter paper (I used butter paper) and cover it with another butter paper. Roll it out into 1/3 inch thick round shape using a rolling pin. Cut it using knife into diamond shaped pieces. Let it cool for 10 minutes. And enjoy your kaju katli.
