Hung curd stuffed (Dahi bhara) spicy kachori recipe




Ingredients :

For the kachori dough,
  • 1 cup all purpose flour(maida)
  • 2 tbsp ghee
  • 1/2 tsp salt 
  • oil for frying 
For the stuffing,

  • 1 cup hung curd
  • 2 tbsp roasted gram flour (Besan)
  • 1 tbsp ginger+green chilli paste, mix 
  • 1/2 tsp roasted cumin powder 
  • 1/4 tsp black pepper powder 
  • 1/4 tsp fennel seeds powder 
  • 1/2 tsp sugar (optional) 
  •  a pinch asafoetida 
  • black salt to taste 
  • 1/4 tsp red chilli powder
  • 1/2 tsp chaat masala

Method :

For the dough,
In a big bowl, add flour, salt, ghee and mix well. Kneaded into a soft dough using enough water. Now cover the dough with a wet cotton cloth or muslin cloth and keep aside for 30 minutes.

For the stuffing,
In a bowl or plate, add hang curd, gram flour, salt, asafoetida, sugar, ginger+green chilli paste and all spices powder. Mix well and keep it in refrigerator for 1 hour. Divide the hang curd mixture in 6 portions and keep it again in refrigerator for som time.

Make kachori,
Divide the dough into 6 portions. Roll out all portion of the dough into a medium thin puri. Place one portion of the hang curd filling in the centre. Bring together all the sides seal it tightly and press the centre of the kachori with your palm.  Make all kachoris using same method. Heat oil in a deep fry pan and fry them in hot oil, on a medium flame. Reduce the flame and deep-fry on a slow flame, till golden brown colour. Drain on a plate or absorbent paper. Serve hot kachori with sweet tamarind chutney.
