Gajja recipe

Gajja is a famous sweet in Bihar and Orissa. Made with Chenna and sugar syrup.

Ingredients :
  • 1 cup homemade chenna (cottage cheese)
  • 1 tbsp semolina
  • 1/4 tsp green cardamom powder 
  • 1 cup+1/2 cup sugar
  • 1/2 cup water 
  • Oil or ghee for deep frying 

Method :
In a big plate, start kneading it with of your palms. Then gather the chenna into a ball and start kneading again, do this for 10 minutes. Now sprinkle the semolina and cardamom. Mix well and make a smooth and creamy dough. Divide the chenna dough into 11-12 portions. Shape each portion like a rectangle. Heat ghee or oil deep frying in a pan. Slowly put the chenna pieces into the hot oil or ghee and fry to golden brown colour on the both sides. Remove and keep aside.

Make the sugar syrup,
In a saucepan, add sugar and water and bring to a boil. Let it boil for 10 minutes or till it takes on a thick consistency. Turn off the flame and put the fried chenna gajja in the sugar syrup. Let it be immersed for 1 hour or till the syrup feels just warm to touch. Serve it immediately.
