Pyaaz (Onion) ki kachori recipe

Ingredients :
For the Dough,
  • 1 cup all purpose flour (Maida)
  • 2 tbsp ghee
  • 1/2 tsp salt
For the Filling,
  • 1 big onion, finely chopped 
  • 1 tbsp oil
  • 1/2 tsp nigella seeds (kalonji)
  • 1/2 tsp cumin 
  • 1/2 tsp fennel seeds
  • 1 tbsp gram flour (Besan)
  • 1/2 tsp coriander powder
  • 1/2 tsp red chilli powder 
  • 1/4 tsp turmeric powder
  • 1 tsp Amchur (dry mango)powder
  • 1/4 tsp garam masala powder
  • 1 tsp ginger+green chilli paste, (mix paste)
  • 1/4 tsp black salt
  • salt to taste (little salt)
  • oil for deep frying
Method :
For the dough,
In a big bowl, add flour, salt, ghee and mix well. Kneaded into a soft dough using enough water. Now cover the dough with a wet cotton cloth or muslin cloth and keep aside for 30 minutes.

For the filling,
Heat 1 tbsp oil in a pan, add cumin seeds, fennel seeds, nigella seeds and onion and saute for 1 minute on the medium flame. Add gram flour, salt, chilli powder, turmeric powder, coriander powder, garam masala powder, mix well and saute for 1 minute. And add, ginger+green chilli paste and mix well and saute for 1 minute on low flame. Remove the mixture from the flame, add amchur powder and mix well. Divide the dough into 6-7 equal portions and keep aside.

Make kachori,

Divide the dough into 6-7 portions. Roll out all portion of the dough into a medium thin puri. Place one portion of the onion filling in the centre. Bring together all the sides seal it tightly and press the centre of the kachori with your palm.  Make all kachoris using same method. Heat oil in a deep fry pan and fry them in hot oil, on a medium flame. Reduce the flame and deep-fry on a slow flame, till golden brown colour. Drain on a plate or absorbent paper. Serve hot kachori with sweet tamarind chutney.
