Stuffed Vegetables Parcel Recipe (Bake In Cooker)

Ingredients :

For dough,
  • 1 cup all-purpose flour 
  • 1/4 tsp salt
  • 1/2 tsp baking powder 
  • 1 tbsp butter or 4 tbsp oil 
  • 1/2 cup curd 
  • Water as a required 
For stuffing, 
  • 2 pieces capsicum of medium size, finely chopped 
  • 1 onion, finely chopped 
  • 1 tbsp garlic, chopped or grated 
  • 4 tbsp tomato sauce 
  • 1 cup cheese, grated 
  • 1 tbsp oil 
  • 1/2 tsp black pepper powder 
  • salt to taste 
  • 5-6 fresh basil leaves or mint leaves
  • 1 tsp chilli flakes 
  • few peppercorn for the sealing 

Method :

For dough,

In a big bowl, add flour, salt, baking powder, butter or oil and mix well. Now add curd and knead well. Add water as per requirement and make a smooth dough. Cover it with a muslin cloth and keep aside for 2-3 hours.

For the filling,

Heat 1 tbsp oil in a pan, add garlic, onion and saute for a few seconds. Add capsicum, salt and saute for 5-7 minutes on medium flame. Add black pepper powder, tomato sauce, chilli flakes, basil or mint leaves and saute for 1 minute. Remove from the heat. At last, mix grated cheese in it.

For the parcels,

Take the dough and knead again for 1 minute. Make balls of dough. Now flatten it with a rolling pin. Don't flatten it too thick or too thin. Place 1 tbsp veg. mixture in the centre and fold it on all sides, sealing it with peppercorn (as you can see in pictures). Keep them in a greased baking pan and sprinkle 1 tbsp oil on them.

Heat a cooker on high flame with 2 cups sand or salt and put a stand, covered with lid without whistle for 10 minutes. After 10 minutes, put the baking pan for baking into cooker. Bake for 20-25 minutes. After 20 minutes check whether the vegetable parcels are puffed and are light golden brown in colour. Remove from the heat. Serve it with tomato sauce.
