Spicy Turai (Ridged-gourd) ki sabzi recipe



Ingredients :
  • 1/2 kg.Turai (Ridged-gourd)
  • 1 onion, chopped 
  • 2-3 garlic cloves, chopped 
  • 1/4 tsp cumin seeds
  • 1/4 tsp mustard seeds 
  • 1/4 tsp fennel seeds 
  • 1/4 tsp cumin powder
  • 1 bay leaf 
  • 1/4 tsp black pepper powder
  • 1 tsp coriander powder 
  • 1/4 tsp turmeric powder 
  • 1/4 tsp red chilli powder
  • 1/4 tsp garam masala 
  • salt to taste 
  • 1 tbsp oil 
Method :
Peel the Ridged-gourd slightly and wash. Cut it small lengthwise size. Heat oil in a pan, add all the seeds, bay leaf and crackle them. Add garlic and onion, saute for 1 minute. Add Ridged-gourd and salt and cover with lid for 2 minutes. After 2 minutes open lid and saute, add all the spices and mix them. Add 1/4 cup water and cover with lid and cook for 5-7 minutes on medium flame. Simmer till the gravy thickens to your choice. Turn off the flame. Serve it with chapatis, paratha, rice.
