Makhane ki (Lotus seeds) sabzi recipe




Ingredients :

  • 2 cups Makhana (Lotus seeds)
  • 1/2 tsp ghee or butter 
For gravy, 
  • 1 cup tomato puree 
  • 1 tbsp onion paste 
  • 1/2 tbsp ginger-garlic paste 
  • 1 onion, finely chopped 
  • 1 tsp coriander powder 
  • 1/2 tsp turmeric powder 
  • 1/2 tsp red chilli powder 
  • 1/4 tsp garam masala 
  • 1/4 tsp black pepper powder 
  • 2 tbsp cashews (soak in 1/2 bowl warm water for 20 minutes) 
  • salt to taste  
  • 1/4 tsp cumin seeds 
  • 2 tbsp oil or 1 tbsp ghee or butter 
Method :
Heat 1/2 tsp ghee in a pan, add lotus seeds and stir-fry for 1minute on medium flame. Remove them from the heat and keep aside. Now make a paste with the cashews and keep aside. Heat oil or ghee or butter in a pan, add cumin seeds and crackle them. Add onion and saute for 1 minute over medium heat. Add ginger-garlic paste and saute for a few seconds. Add onion paste and saute for 2-3 minutes.
Add the powder spices, salt and saute another a minute. Add tomato puree and cook for about 5 minutes.

Now add the fried lotus seeds and 1/2 cup of water and cook for 2 minutes. Add cashew paste and mix well, cook for 2 minutes. Turn off the heat. Serve it with paratha, roti, pulao, naan.
