Basundi or rabdi recipe

Ingredients :

  • 4 cups full fat milk 
  • 1/2 cup sugar 
  • 1/4 tsp green cardamom powder 
  • 1 tbsp pistachio, chopped 
  • A pinch of saffron strands (Soaked in 2 tbsp of milk) 

Method :
 Boil the milk in a heavy bottom pan or vessel on high flame. Bring it comes to a boiling, reduce flame to low and allow to simmer for 20 minutes, stirring in intervals of 2-3 minutes. Now add sugar at this point and keep stirring constantly. You will see that the milk thickens. Now add cardamom powder and mix well. Turn off the flame and allow to cool down. Garnish with chopped pistachio and saffron. Serve it hot or cool with malpua or desserts.
