Vermicelli or seviyan kheer recipe




Ingredients :

  • 200 gms. vermicelli 
  • 1 tsp ghee
  • 5 cups milk 
  • 1 cup sugar 
  • 1/4 tsp green cardamom powder 
  • 2 tbsp raisins  
  • 2 tbsp cashew nuts 
  • 1 tbsp pistachio, chopped 
  • 2 tbsp coconut, grated or finely chopped 
  • a pinch saffron strands, (soaked in 2 tbsps of warm milk)

Method :
Heat ghee in a pan and roast the vermicelli for 2 minutes on the medium flame. Remove and keep it aside. Now, in another heavy bottom pan or vessel, add milk. After 5 minutes, add roasted vermicelli and stir well, cook on the medium flame. After 10 minutes the vermicelli will turn soft. By this time the milk will also start to thicken. Now, add sugar and saffron and mix well. Turn off the flame. Add all dry fruits, cardamom powder and mix them.  Serve it hot or chilled.
