Purple yam or kand (Ratalu) ki sabzi recipe

Yam ki sabzi 

Ingredients :
For sabzi,
  • 1/2 kg. purple yam or kand
  • oil for frying
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/4 tsp cumin seeds
  • 1/4 tsp fenugreek seeds
  • 1 bay leaf 
  • 2 tbsp tamarind pulp 
For masala paste, 
  • 5 garlic cloves
  • 2 green chillies
  • 2 tbsp mustard seeds 
  • 1/2 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp red chilli powder 
  • salt to taste
Method :

Wash purple yam and remove skin with a knife, cut into round slices. Now in a pressure cooker, add purple yam slices and a glass of water and boil it until a whistle. After 10 minutes, drain water of boiled yam and keep aside for cool. Make masala paste, in a blender, add all masala ingredients and salt, make a fine paste. Heat oil in a frying pan and fry this purple yam pieces till golden brown colour and remove it. Heat 2 tbsp oil in a pan, add mustard, cumin, fenugreek seeds and bay leaf and crackle them. Add masala paste and saute for 5 minutes on the medium flame. Add tamarind pulp and 1/2 bowl of water and add fried purple yam pieces and cook for again 4-5 minutes. Switch off the flame. Serve it with rice and roti.
