Panjabi Jeera Rice recipe




Ingredients :

  • 1cup Basmati rice
  • 2 cups of hot water 
  • 1/4 tsp salt 
  • 1 tbsp ghee or butter
  • 1 tbsp cumin seeds or shah jeera 
  • 1-star anise
  • 2 green cardamom 
  • 2 cloves 
  • 1cinnamon, medium stick 
  • 1 bay leaf 
Method :
Wash the rice 2 times, drain water from the rice. Keep aside for half an hour (30 minutes). Now heat ghee or butter in a heavy vessel, add cumin seeds, bay leaf, cloves, star anise, cinnamon stick and green cardamom. Add soak rice and stir for few seconds. Add hot water, salt and mix well. Now bring it to a boil and then cover with a lid and cook on lower flame. Cook for 10-12 minutes or until the rice is done and water has evaporated. Turn off the flame. After 2 minutes, open the lid and keep aside for 5-10 minutes. Now stir lightly with a ladle and keep aside to cool down. Serve with dal fried and any gravy sabzi.
