Masoor dal (split red lentils) stuffed masala dosa recipe





Ingredients :

Ingredients for dosa batter,
  • 1 cup rice
  • 1/4 cup black gram split (Urad dal)
  • 1/2 tsp salt 
  • 1 tbsp oil or butter 
For dry dal fry, 
  • 1 cup split red lentils (Masoor dal), soak and drain
  • 1 onion finely chopped 
  • 1 tomato finely chopped
  • 2 green chillies finely chopped 
  • few curry leaves 
  • a pinch of asafoetida (hing)
  • 1 tsp mustard seeds 
  • 1/2 tsp red chilli powder 
  • 2 pinches turmeric powder
  • salt to taste 
  • 2 tbsp lemon juice 
  • 1-2 tbsp oil 


Method :
For Dosa batter :

Wash rice and urad dal, soak overnight or for 5-6 hours. Now remove excess water and grind to a batter consistency. Transfer in a big bowl, add salt and mix well. If the batter is very thick, few cups of water can be added, but ensure that the consistency is not watery.

Now for dry dal fry:
Heat oil in a pan, add mustard seeds, hing, curry leaves and green chilli. After few seconds, add soak lentils (dal), salt, turmeric, red chilli powder and mix well. Add a little water and mix well. Cover with lid and cook for 5 minutes on the low flame. Now, open the lid and add chopped onion and tomato and mix well. Now remove on the flame and add lemon juice and mix well.

Now, making masala Dosa :

Heat a non-stick tava over medium- high flame. Now sprinkle few drops of water to check whether the tava is sufficiently hot or not. When the water drops starts bubbling and evaporates, rub the tava with a cotton cloth. Now with a big spoon, pour the dosa batter on the tava and use the same spoon for spreading the dosa batter into a round shape. Pour few drops oil or butter on the sides and in the center of the dosa. Now pour a spoon of chutney on the dosa and use the same spoon for spreading in evenly. Now put 1-2 tbsp dal mixture. Press it with the spatula so that the mixture get stuck to the batter which is getting cooked. Now fold the dosa, flip and cook the other side for a couple of seconds till crisp and brown. Serve it hot with coconut chutney and sambar.
