Fried Litti- chokha or Litti-chutney recipe

Litti-Chokha is very famous in Bihar. Litti is made using Bengal gram or chana sattu and masalas including chopped onion, garlic-ginger and green chilli. Wheat flour dough balls are made and then are stuffed with the channa sattu filling. These ball and deep fried or roasted on coal or in tandoor.
I usually fry my littis and serve it with Aloo chokha and sauce or chutney.


Ingredients :

For Dough,
  • 2 cups wheat flour (Gehun ka atta)
  • 1/2 tsp salt 
  • 1 tbs butter or 2 tbsp vegetables oil
  • 1 cup of water 
  • Oil for deep frying

For Filling,
  • 1 cup roasted Bengal gram (bhuna hua chana dal) or chana sattu 
  • 2 green chillies
  • a small piece dried ginger or fresh ginger
  •  or 1/2 tbsp dried ginger powder  
  • 7-8 garlic cloves
  • 1 onion finely chopped 
  • 4 tbsp lemon juice 
  • 1/2 tsp rock salt 
  • white salt to taste 
  • 2 pinch of asafoetida (Hing)
  • 1 tsp cumin seeds roasted 
  • 1/2 tsp carom seeds roasted 
  • 1/2 tsp Nigella seeds (kalonji) roasted
  • 1/2 tbsp butter or 1 tbsp mustard oil (I used butter)
For aloo chokha,
  • 4 potatoes, boiled, peeled and mashed
  • 1 onion chopped
  • 2 green chillies chopped
  • 1 tomato chopped 
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • a pinch of garam masala
  • 1 tbsp lemon juice 
  • 1/4 tsp cumin seeds
  • 1/4 tsp fennel seeds
  • 1/4 tsp mustard seeds
  • 1 tbsp oil
  • salt to taste
  • 1/2 tbsp butter for garnishing 
  • 1/4 cup of water
Method :

For Aloo chokha, 

Heat oil in a pan, add cumin, mustard and fennel seeds. Crackle them, add chopped onion and green chilli saute for few second. Now, add chopped tomato, salt, red chilli, turmeric powder and garam masala and saute for 1 minute on medium flame. Now, add mashed potato and mix well. After mixing, add 1/4 of water and cook for 1-2 minutes on low flame. Turn off heat and add lemon juice and mix well. Garnish with butter. Serve it with Litti-chokha.

Aloo chokha 

Method :
For Litti stuffing,

In a grinder, put all the ingredients and grind them to make a fine powder (chana sattu). Now transfer it in a big bowl or plate. Add all ingredients into chana sattu. Now mix the ingredients and divided 14-15 portions and keep aside.

For Litti,
In a big bowl, add flour, salt, butter; mix by hand. Now, add water slowly-slowly and make a smooth dough.  Divide the dough and make 14-15 balls. Now take each ball and flatten it between your palm and slowly roll out into discs using a rolling pin. Now, fill a portion of the stuffing and close the balls by lifting the sides by hand and flatten the litti a bit by pressing your palm. Heat oil in a deep frying pan and fry the littis in it till they are golden brown in colour on low flame. Now, transfer the littis to kitchen towel/tissue paper. Serve it hot with chokha or any chutney.
