Aam ka achar (Mango pickle) recipe

Ingredients :
  • 2 kg. Raw mangoes (kaccha Aam)
  • 6 tbsps salt or salt to taste(Namak) 
  • 2 tbsp turmeric powder (Haldi)
  • 5-6 tbsp red chilli powder(laal mirchi)
  • 1 cup yellow mustard seeds(Peeli sarson)
  • 1/2 cup coriander seeds (dhaniyan)
  • 2 tbsp fenugreek seeds (Methi daana)
  • 2 tbsp cumin seeds (jeera)
  • 2 tbsp carom seeds (ajwain)
  • 2 tbsp fennel seeds(saunf)
  • 2 tbsp nigella seeds (kalonji)
  • 1 tsp asafoetida (Hing)
  • 1 Kg. Mustard oil or (Needed as per required to soak the pickle completely in oil but not very much) 

Method :
For pickle masala powder,
Heat a pan, add fenugreek seeds. After some seconds, add cumin, carom, nigella, fennel, coriander seeds, roast for 4-5 minutes on the medium flame. Now add in mustard seeds and just turn off the heat and keep aside to cool. Now after the spices have cooled down, grind them coarsely and your pickle masala powder is ready.

For pickle,

Wash the mangoes and then dry it. Cut the stalk of the mangoes. Now cut the mango into small or medium chunks without peeling.

Put the chopped mangoes in a big jar, add in salt and turmeric powder, mix and cover with the lid and keep indoor for 1-2 days.

After 1 day check it. The mangoes should have left some moisture. Stir again and keep it again for a day.

After two days, now, add asafoetida, red chilli powder and pickle masala (Aachar masala) powder, 1 cup of oil and mix well.

Keep it daily in sunlight for one week and stir every day to mix well.

Now on the last day, heat oil in a pan till it reaches the smoking point. Turn off the flame and keep it aside to cool. When the oil cools, put this oil over the pickles and mix well.

Put in a dry and airtight jar, add oil over it and cover. You can store your pickles for 1-2 years.
