Semolina (Rava or sooji) Dhokla recipe

Ingredients :

  • 1 cup semolina ( Rava or sooji)
  • 2 tbsp yogurt (Dahi) or 1 cup of butter milk 
  • 1/4 tsp salt 
  • 1/2 cup of water 
  • 1 tsp eno powder 
  • 1 tbsp oil for greasing 
For tempering,

  • 1 tbsp oil
  • 2 green chillies chopped 
  • 1/2 tsp mustard seeds
  • few curry leaves 
  • 1 tsp sesame seeds 

Method :
In a big bowl, add semolina (Rava), yogurt, salt and water and mix well, ( If you are using butter milk then you don't need to add water). Now let it set for 20-30 minutes. Add approx. a glass of water in steamer and heat it over medium flame. Now grease a baking pan or tray with 1 tbsp oil. After 20-30 minutes, add eno powder in semolina batter, mix until it starts to bubble on the surface. Now pour it into greased pan or tray till its half capacity and place in the steamer. Steam it for 8-10 minutes over high flame. Now take out baking pan or tray from steamer and let it cool for few minutes. Now, cut rava dhokla into small squares. For tempering, Heat 1 tbsp oil in a pan, add mustard seeds. When they begin to crackle, add sesame seeds, curry leaves and chopped green chilli and saute for few seconds and turn off the flame. Now pour prepared tempering over rava dhokla . Serve it with any sauce or chutney.
