Namkeen sev recipe

Ingredients :

  • 1 cup gram flour (Besan)
  • salt to taste 
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chilli powder 
  • 1/4 tsp chat masala or Amchur powder 
  • 1 tbsp hot oil 
  • A pinch of asafoetida (Hing)
  • 1/4 cup water 
  • oil for frying 

Method :
Sieve the gram flour in a big plate or bowl. Add turmeric powder, chat masala, red chilli powder, asafoetida, salt and hot oil and mix well. Now, add water in little quantities and make smooth and soft dough. Now take a sev machine, fit mold with thinnest hole and grease its entire inner surface with few drops oil, fill it with prepared dough and close its with lid tightly. Now, heat oil in a deep frying pan over medium heat for deep frying. Now hold machine over pan, turn handle of machine and press out thin strands into hot oil. As strands are starting to falll into the oil, slowly move machine in a circular motion. Deep fry both sides for around 1 minute. On a medium flame until it becomes crisp and light brown colour. Now drain and transfer into plate. Now let it cool down at room temperature for 20-30 minutes, before breaking it into pieces. Now store in an airtight container and use it for up to 2-3 weeks.
