Gajar (Carrot's) ki easy and tasty Biryani recipe





Ingredients :

  • 1 cup Basmati rice
  • 1 medium size carrot, chopped 
  • 2 tomatoes chopped 
  • 1/2 capsicum chopped for taste 
  • 1 large onion ( finely chopped half onion and half slice the onion very thin for frying)
  • 1-12 cashew nuts 
  • 2 green cardamom
  • 1/4 tsp green cardamom powder
  • 1 black cardamom 
  • 8-10 black peppercorns  
  • 1 star anise 
  •  a pinch of cinnamon powder or small stick 
  • salt to taste 
  • 1 bay leaf 
  • 2 tbsp lemon juice for sour taste 
  • 1 tbsp butter or deshi ghee or 2 tbsp vegetable oil
  • 1 cup+1/2 cup water ( Dedh cup paani) 


Method :
Wash and drain basmati rice and keep it aside for 30 minutes. Now in a blender, add chopped carrot, chopped capsicum and blend it, now add in chopped tomato and again blend them and make a smooth puree. Heat butter or ghee or oil in a heavy bottomed pan and fry these slice onion, on low to medium flame. Stir the onion continuously, avoid burning and slowly brown the onion. Now, drain it on a kitchen paper, when they turn golden brown and keep it aside. Now fry cashew till light brown in colour and drain it and keep aside. Now in the same pan, add green and black cardamom, bay leaf, star anise, black peppercorns and crackle them. Add finely chopped onion and saute for few seconds. Now add carrot, tomato, capsicum puree and cook for 5 minutes on high flame. Add salt, cinnamon powder, green cardamom powder, cook for 1-2 minutes. Now, add water and let it come to a boil. Add soak basmati rice and stir them. And cover it with a lid and let it cook for 10 minutes on lower flame. After 10 minutes open lid and sprinkle fried onion, cashew and again cover with lid for 1-2 minutes. Now remove from the flame and squeeze lemon juice on it. Garnish it with fried onion, cashew nuts. Serve hot or cool with any raita, curd.
