Vegetables curry reci





Ingredients :
  • 1/2 cup cauliflower chopped 
  • 1/2 cup beans chopped 
  • 1/2 cup capsicum chopped 
  • 1/2 cup carrot chopped 
  • 1 big potato, peeled and cut into cubed
  • 1 onion chopped 
  • 1/2 cup tomato puree
  • 2 tbsp onion paste 
  • 1/4 tsp ginger past 
  • 1/4 tsp cumin seeds
  • 1 bay leaf 
  • 1/2 tsp red chilli powder 
  • 1/4 tsp turmeric powder
  • 1/4 tsp black pepper powder 
  • a pinch cardamom powder
  • a pinch cinnamon powder 
  • salt to taste 
  • 2 tbsp oil 
  • 2 tbsp cashew nuts paste 
  • 1 cup of water 

Method :
In a pan, add a big bowl of water, 1/2 tsp salt and all chopped vegetables, boil for 5-7 minutes. Now drain all water from it and keep aside water(vegetable stock) and boiled vegetables. Now heat oil in a pan, add cumin, bay leaf and crackle them. Add chopped onion and saute for 1 minute. Add onion, ginger paste and saute. After few seconds, add tomato puree, all spices, little salt to taste(a pinch salt) and cook for 2-3 minutes on medium flame. Add all boiled vegetables and stir for more 2 minutes. Add vegetables stock, cashew paste and mix well. And cook for 5 minutes on medium flame, turn off flame. Serve it with rice, roti, pulao, puri, paratha.
