Muttar (Green peas) ki kulcha recipe



Mutter Kulcha (Green peas kulcha)

Ingredients :

For kulcha Dough,

  • 3 cups wheat flour or maida( I used wheat flour)
  • 1/2 cup curd ( Dahi)
  • 1 tsp salt 
  • 1 tsp baking soda
  • 1 tbsp butter
  • some warm water 
  • Oil, ghee and butter for shallow frying

For the Filling,
  • 1+1/2 cups green peas, boiled (Hari Muttar)
  • 2-3 green chillies
  • 6-7 garlic cloves
  • a small piece ginger 
  • salt to taste 
  • 1/4 tsp black salt
  • 1/4 tsp garam masala
  • 1/4 tsp red chilli powder 
Method :
To Make Filling,
In a mixer, add the boiled peas (Muttar), ginger, garlic, green chillies and grind without water. Grind till it forms a smooth paste. In a plate or bowl, add peas paste, salt, red chilli, black salt, garam masala powder mix well. Now, divide into 12 portions and keep aside.

Make the dough,

Flour, salt, butter, curd, baking soda mix together in a large bowl. Now, add curd and mix well. Add enough warm water and knead in to a soft dough. Now cover with a wet muslin cloth and keep aside for 30 minutes. Now after 30 minutes, open the dough and knead the dough for few seconds. Divide the dough into equal portion and keep aside.
 Now take a ball of dough and fill the muttar mixture and making a round ball and spread dry flour on the chakla and pat with light hand, after roll out round roti or paratha with a rolling pin. Now heat a tawa and put kulcha on the tawa. Add 1 tsp oil, ghee or butter and frying both sides golden brown and remove from the tawa. Serve with any sauce, chutney, curd and raita.
