Zucchini mix vegetables stir-fry recipe (Healthy dish)


Stir-fried zucchini mix vegetables, a healthy dish 
Ingredients :

  • 1 Zucchini, cut into lengthwise or sliced 
  • 1 Yellow bell pepper, cut into chunks 
  • 1 capsicum, cut into chunks 
  • 1 tomato, cut into chunks
  • 4-5 Salad Lettuce (Salad patta), finely chopped 
  • 8-10 french beans cut into half 
  • 1 onion chopped 
  • 5-6 garlic cloves finely chopped
  • 2 green chillies, cut into lengthwise 
  • 2 tbsp Olive oil or 1 tbsp butter
  • salt to taste 
  • crushed black pepper to taste 


Method :
Heat olive oil or butter in a pan, add garlic, onion, green chillies and stir for few second. Add french beans, capsicum, yellow bell pepper, zucchini and cook for 2-3 minutes on the medium flame. Then, add salt and mix well. After few seconds, add chopped Salad Lettuce, tomato and saute for a minute. Turn off the flame. Season with crushed black pepper. Serve hot with roti.
